A simple snack from leftover Greek yogurt turned into one of my favorite quick experiments. After making a previous recipe, I had some Greek yogurt left over and decided to do something creative instead of letting it go to waste.
By blending Greek yogurt with a generous amount of blueberries and a little local honey, I ended up with a lightly sweet frozen snack. After freezing it overnight and letting it soften slightly in the fridge, the texture landed right where I wanted it — somewhere between frozen yogurt and sherbet.
This is an easy way to use leftovers and make a refreshing, healthier snack with just a few ingredients. Sometimes the simplest ideas end up being the most satisfying.
