🥬 INGREDIENTS
For Base Sauce:
– Tomatoes (blanched & blended)
– Butter
– Garlic (finely chopped)
– Onion (finely chopped)
– Capsicum (finely chopped)
– Salt
– Black pepper
– Chilli flakes
– Oregano
– Optional whole spices (bay leaf, cinnamon, cardamom)
For Layering:
– Brinjal slices (or zucchini)
– Paneer (lightly blended, not paste)
– Cheese (grated)
– Oregano & black pepper (for paneer mix)
👩🍳 HOW TO MAKE (Step-by-Step)
1️⃣ Prepare tomato sauce by blanching, peeling & blending tomatoes
2️⃣ Heat butter, sauté garlic & onion
3️⃣ Add capsicum and tomato base sauce
4️⃣ Add salt, pepper, chilli flakes & oregano
5️⃣ Cook till thick base sauce forms
6️⃣ Mix paneer with cheese & herbs
7️⃣ Layer brinjal → sauce → paneer → sauce → brinjal → cheese
8️⃣ Bake at 180°C for 25 minutes
OR
Cook in a covered pan if oven not available
