The perfect mid-afternoon snack and a great way to boost your vegetable intake

Ingredients:
1× Cucumber
2x Capsicum Sticks
2x Carrot Sticks
50g Sushi Rice or White Rice
15g Avocado
Toppings
-sesame seeds
-spicy mayo
-soy sauce
Instructions:
-Chop veggies.
Cut off ends of cucumber and use a knife or small spoon to scoop out the inside until it’s hollow. Stuff with rice and veggies. Cut the cucumber into pieces and top with spicy mayo and sesame seeds. Dip into soy sauce and enjoy!
