No Rice Dum Biryani! Jackfruit Barnyard Millet Biryani | Healthy Weight Loss Recipe

Ingredients
For Marinating Jackfruit
• 400 g raw jackfruit pieces (washed and air-dried)
Paste
• 25–30 cashew nuts
• 1 inch ginger
• 10 garlic cloves
Spices
• 1 tsp turmeric powder
• 1 tsp red chilli powder
• ½ tsp black pepper powder
• 1 tsp lemon juice
• 1 tsp salt
Mix everything well and marinate for 30 minutes so the jackfruit absorbs the flavors.
For Masala Gravy Paste
Grind together to make a smooth paste:
• 2 onions
• 2 tomatoes
• 8–10 garlic cloves
• 1 small cinnamon piece
• 3–4 cloves
• ½ tsp black pepper
For Cooking Millet
• 1 cup Barnyard Millet (washed and soaked 2–4 hours)
Whole spices for boiling water
• 1 bay leaf
• 1 small cinnamon stick
• 3 cloves
• 1 tsp salt
Other Ingredients
• 2 tbsp olive oil or cooking oil
• 1 tsp cumin seeds
• ½ tsp turmeric powder
• ½ tsp red chilli powder
• 1 tsp coriander powder
• 2 tbsp lemon juice
• Saffron soaked in ¼ cup warm water
• Fresh coriander leaves (chopped)
• Fresh mint leaves (chopped)

Cooking Method
1️⃣ Marinate the Jackfruit
Prepare the cashew-ginger-garlic paste and mix with all spices, lemon juice and salt.
Add jackfruit pieces and marinate for 30 minutes.
2️⃣ Prepare the Masala Paste
Grind onions, tomatoes, garlic, cinnamon, cloves and black pepper into a smooth paste.
3️⃣ Sauté the Jackfruit
Heat 2 tbsp oil in a pan.
Add the marinated jackfruit pieces and sauté for 8–10 minutes.
Remove and keep aside.
4️⃣ Cook the Millet
Boil water with bay leaf, cinnamon, cloves and salt.
After 3–4 minutes remove the whole spices.
Add soaked barnyard millet and cook for 16–18 minutes until about 90% done.
Drain excess water if required.
5️⃣ Cook Jackfruit with Gravy
Heat 2 tsp oil in a pan.
Add:
• cumin seeds
• turmeric powder
• red chilli powder
• coriander powder
•. 4-5 green cardamom
• 10-15 cashew nuts
•. 15-20 Raisins- Kishmish
Once fragrant, add the ground masala paste and cook for a few minutes.
Add the sautéed jackfruit add 1 cup water and cook for about 10 minutes until soft and coated with gravy.
Fry half sliced onion and chopped two green chillies for garnishing
6️⃣ Layer the Biryani (Dum Cooking)
Take a deep pan with a tight lid.
Layer 1: Jackfruit with gravy
Layer 2: Cooked millet
Sprinkle chopped coriander leaves.
Repeat another layer of:
• jackfruit gravy
• millet
On the top layer add:
• saffron soaked in ¼ cup water
• 2 tbsp lemon juice
• coriander leaves
Cover tightly and cook on very low flame for 5 minutes (dum)
7️⃣ Final Garnish
Sprinkle fresh chopped mint leaves and serve hot.
