Ingredients
* 1 cup mozzarella cheeseshredded, melted
* 2 oz cream cheese softened
* 2 large eggs beaten
* 1.5 cups almond flour fine ground
* 1 teaspoon baking powder
* 2 tablespoon butter for brushing
* 2 tablespoon olive oil for sautéing
* 2 cloves garlic minced
* 0.25 cup parmesan cheesegrated, for sprinkling
Instructions
1. In a microwave-safe bowl, combine mozzarella and cream cheese. Heat until smooth and melted, about 1-2 minutes, stirring halfway through.
2. Add beaten eggs, almond flour, and baking powder to the melted cheese. Stir until well combined into a soft dough.
3. Cover the dough tightly and refrigerate for at least 4 hours to firm up.
4. Divide the dough into 8 equal balls. Flatten each ball between parchment paper.
5. Preheat oven to 350°F Line a pan with parchment paper.
6. Place the flattened dough on the baking sheet and bake for 15-17 minutes.
7. While baking, heat butter and olive oil in a pan. Add minced garlic and sauté until lightly golden.
8. Brush baked flatbreads with garlic butter, sprinkle with parmesan, and return to oven for an additional minute.
9. Serve hot and enjoy!
