Method~
Sauté the Base: Heat oil in a pan. Add onions and garlic, sautéing until translucent.
Add Veggies: Toss in the diced bell peppers and chopped tomato and cook for 2-3 minutes until slightly softened.
Simmer Sauce: Pour in the tomato puree, salt and pepper. Let it simmer on medium-low heat until the sauce thickens and the flavors meld.
Add Eggs: Use a spoon to make small “wells” in the sauce. Gently crack an egg into each well.
Cook: Cover the pan with a lid and cook for 5–8 minutes, or until the egg whites are set but the yolks are still slightly runny.
Serve: Garnish with fresh coriander and serve hot with crusty toasted bread.
