Pumpkin is a highly nutrient dense food, low in calories but packed with vitamins and minerals, all of which are also in its seeds, leaves and juices. It is used in desserts, salads, soups, preserves and even as a substitute to butter
This creamy, healthy and silky textured soup made with pumpkin puree and gently spiced is a super easy, delicious soup recipe
Ingredients
Pumpkin 750g
Onion 1 big
Oil 1tsp
Butter 1tsp
Ginger 1/4 inch
Salt to taste
Pepper to taste
Orange zest of 1 orange
Orange juice of 1 orange
Method
Heat oil and butter in a pressure pan
Add onion , Pumpkin and saute well
Add water, salt, close the lid and pressure cook until one Whistle
Switch off the flame and allow it to cool
Grate ginger and orange zest into the pan and allow it to boil for five minutes
Switch off the flame, make it into a puree using a blender
Switch on the flame, add some water, pepper, salt and mix
Once the soup begins to boil, switch off the flame and add orange juice
Hot and creamy Pumpkin soup is ready to serve
