Meal Prepping can be easy when you are inspired or have delicious ideas! I definitely felt inspired on this Meal Prep Sunday! However Breakfast did not make it in this video. I ran out of time. Life has been busy and meal prepping what I can has been a lifesaver. In this video I made a sun-dried tomato hummus, tomato basil soup, and a crispy curry spiced chickpea salad. All three recipes were yummy. One thing that I will do next time when I make the hummus is use dried chickpeas instead of canned. But overall this recipes were winners. Sun-Dried Tomato Hummus

1 16 oz can of Chickpeas
2 tbsp tahini
2 garlic cloves
salt and pepper
1/2 tsp cumin
1/4 tsp red chili flakes
1/4 tsp dried basil
1/4 cup olive oil
juice of half of a small lemon
Fresh basil and olive oil for garnish

Crispy Curry Spiced Chickpea Salad

For the Crispy Chickpeas
1 16 oz can of Chickpeas
1 1/2 tbsp curry powder
1 tsp onion powder
1 tsp garlic powder
1 tsp thyme
salt and pepper
1 tsp cumin
1 tsp smoked paprika
1/4 tsp cayenne pepper
2 tbsp olive oil

For the salad

Spinach
Red Onion
red bell pepper
cucumber
pumpkin seeds
Prepared Farro
fresh parsley
shredded carrots
salt and pepper

Lemon Tahini dressing

3 tbsp tahini
1 tbsp honey
salt and pepper
1/4 tsp garlic powder
1/4 cup water
juice of 1/2 a lemon
