For making the mint-chutney we need 1/4 cup chopped mint/pudina leaves, 1/2 cup chopped cilantro/coriander leaves, 1 tsp grated ginger, 1 tbsp chopped pearl onion or you can use garlic or garlic ginger paste, 1/2 tsp brown sugar/sugar, 1/2 tsp salt, a tiny ball of tamarind, 4 Thai chillies (according to your spice level), 3/4 tbsp lemon juice, 1.5 tbsp coconut (optional). Grind all the ingredients using a blender with no water and make it a smooth paste. Our sauce/chutney is ready.

You can add tomato ketchup, cream cheese/butter and the chutney in different layers to make colorful multi tier sandwich!
For making the pizza sauce I heated up a tablespoon of olive oil and added 2-3 chopped Thai chillies, added a can of organic tomato paste and mixed well. Added few cherry tomatoes, dried homemade oregano powder for aroma, dried onion flakes (finely chopped onion also works) and a pinch of salt . Mix well and turn off the stove. Pizza sauce is ready.
Spread the sauce on the crust (I used the store bought crust, bought it from trader Joe), spread cheese ( I used pepper jack) add thinly sliced vegetables ( I used onions, zucchini, bell peppers (capsicums)). Add cheese on top. Preheat oven at 425 degree Fahrenheit or about 219 degree celsius for 10 minutes. The delicious vegetable pizza 🍕 is ready! Enjoy 😉😊
