Ingredients:
• 2 cups cooked red or white quinoa (from 1/2 cup uncooked)
• 1 cup sliced strawberries, washed
• 1 cup blueberries, washed
• 1 cup blackberries, washed
• Juice of 2 limes
• 3 tbsp. maple syrup
• ½ tsp. ground ginger
• Lime zest (optional)
Directions:
• Add quinoa and berries to large bowl and set aside.
• In separate bowl, whisk together lime juice, syrup & ginger.
• Pour dressing over salad & toss to combine.
• Serve immediately with lime zest garnish or store in fridge up to 3 days.
