1 1/2 cups quinoa:
6 tablespoons olive oil:
Juice of 1 fresh lemon
4 – 6 green onions thinly sliced
1/4 to 1/2 cups fresh mint leaves, finely chopped (quantity depends on you mint taste preference)
1/4 to 1/2 cup fresh parsley, finely chopped
1 or 2 grated carrots
1 organic red bell pepper finely diced
1 tablespoon minced fresh or 1 teaspoon powder turmeric (CAUTION: turmeric stains)
1 tablespoon raw honey or maple syrup:
1/2 cups raisins (I cut each raisin in 2 or 3 pieces)
Salt & pepper to taste
Combine all ingredients then chill before serving 🍴
