INGREDIENTS
1 eggplant
1 cup ricotta cheese
1/4 cup Parmesan
1/2 cup mozzarella (all cheeses can be vegan or reduced fat)
1 egg
Salt/pepper
Oregano
1 cup marinara sauce (or tomato)

INSTRUCTIONS
Preheat oven to 350°
Slice eggplants, add salt, let sit for 30 minutes and pat them dry
Bake them for 10 minutes
Mix ricotta, Parmesan, egg and salt and pepper
Spread a thin layer of marinara onto the bottom of a baking dish.
On each slice of eggplant, spoon a thick layer of ricotta mixture and sprinkle with mozzarella.
Roll up and place in baking dish.
Sprinkle with remaining Parmesan.
Bake until eggplant is tender, sauce is boiling and cheese is melted, 10-15 minutes.
