Ingredients:
– 1 egg
– 1 cup of Creamy Peanut Butter (Alternative: Creamy Almond Butter)
– 1/2 cup of Monkfruit Sweetener
Instructions:
1) Preheat oven to 350 degrees.
2) In a mixing bowl, add the egg, peanut butter and monkfruit sweetener. Mix the ingredients until it forms a dough-like consistency.
3) On a baking sheet, line with parchment paper or a silicon baking mat. Roll the dough into 1-inch balls and place them on the baking sheet. I made 10 cookies.
4) With a fork, score the cookies by pressing down on them gently one way and turn a 90 degree angle to press down the other way.
5) Bake the cookies for 10-12 minutes (I baked for 12 minutes).
6) Let the cookies rest for about 5 minutes before devouring all of it!
7) Enjoy!
