Ingredients:
Black Rice Khichdi:
• 1/2 cup Black Rice
• 1/4 cup Yellow Moong Dal
• 2 tsp Ghee
• 1/2 tsp Mustard Seeds
• 8-10 Curry Leaves
• 1 -2 Dried Chillies
• 5-6 Cashews
• 1 Cinnamon Stick
• 1 tbsp Carrots
• 1 tbsp French Beans
• 1 tbsp Corn
• Salt To Taste
• 1/2 tsp Turmeric Powder
• A Pinch Of Hing
• 4-5 Garlic
• 1 inch Ginger
Turmeric Infused Veggies Coconut Soup:
• 1 Onion
• 1 inch Ginger
• 7-8 Garlic Cloves
• 1 inch Lemongrass
• 1 inch Turmeric
• 1 Green Chilli
• 1 tbsp Coconut Oil/Olive Oil
• 8-10 French Beans
• 1 Carrot
• 1 Pak Choi
• 4-5 Mushrooms
• 1 cup Coconut Milk
• 1/2 cup Veg Stock
Crispy Corn:
• 1 cup Corn
• 1 tbsp Corn Flour
• 1 tbsp Rice Flour
• Salt To Taste
• Pinch Of Turmeric
• Pinch Of Chilli Powder
• 1 tsp Oil
• 1 Onion
• 6-7 Garlic
• 2 tbsp Red-Yellow-Green Bell Pepper
• 1 tbsp Coriander Leaves
• Salt To Taste
• Pepper To Taste
• 1 tsp Chaat Masala
Method Of Preparation
Black Rice Khichdi
1. Take a pressure cooker and pour in some ghee.
2. Add mustard seeds, curry leaves, dried chillies, hing and cinnamon stick.
3. Put a inch of ginger, garlic cloves and cashew nuts. Cook for a minute or so till a slight fragrance starts to come.
4. Add chopped carrots, french beans, corn, salt to taste and turmeric powder in the cooker.
5. Now put a cup of soaked black rice in the cooker along with yellow moong dal and few cups of water.
6. Cook till 3 whistles are done and 5 minutes on low flame.
7. It’s ready to serve.
Turmeric Infused Veggie Coconut Soup
1. Take a pan and add some oil in it.
2. Add chopped onions, ginger, garlic cloves, lemongrass, fresh turmeric roots and green chilli.
3. Cook on low flame till it gets translucent.
4. Add a bowl of mushrooms, pak choi whites and cook for 2-3 minutes.
5. Then put french beans, pak choi greens, shredded carrot and salt to taste.
6. Pour a cup of vegetable stock in the pan.
7. Add in a cup of coconut milk. Cook for some time till it starts to boil.
8. Sprinkle some black pepper powder and stir.
9. Ready to Serve.
Crispy Corn
1. Use an air fryer and add a cup of boiled corn, rice flour, corn flour, salt to taste, turmeric powder and red chilli powder.
2. Mix all the ingredients by shaking it up a bit.
3. Fry it in an air fryer that is already preheated, so cook at 180 degrees Celsius for about 10-12 minutes.
4. Shake it again and then recook for 5-6 minutes.
5. Now take a pan and add oil in it.
6. Saute some garlic cloves, chopped onions and red-yellow-green bell peppers. 7. Add the fried corn, salt to taste along with black pepper powder.
8. Mix and Shake it in the pan.
9. Ready to Eat.
