This week I have another super tasty, healthy and high protein vegan meal prep idea for you! This split pea / yellow lentil curry has everything you need and want for a quick, simple, delicious and healthy meal for your busy week!

Ingredients (Serves 8)

Split peas/ yellow lentils- 600g soaked for at least 4 hours
Onion- 3 medium
Potatoes- 4 large
Broccoli- 1 whole
Tomato- 4 medium
Spinach- 1 bunch/ 2 handfuls
Ginger- 2×2 inch piece
Garlic- 4 tablespoons
Firm tofu- 300g
Curry powder- 6 tablespoons
Tarragon leaves- 2 tablespoons
Tumeric- 3 tablespoons
Smoked paprika- 2 tablespoons
Veggie stock- 2 tablespoons

Tofu prep
Curry powder- 1 tablespoons
Veggie stock- 2 tablespoons
