You don’t have to be vegetarian to enjoy these tofu burritos! These are quick, simple and healthy burritos you can meal prep at the beginning of the week and have for breakfast, lunch or dinner for a clean protein boost!
Here’s what you’ll need:
1/2 package of firm tofu or approximately 250g
12oz can of corn
19oz can of black beans and add the juice in the can (also known as aquafaba)
2 green onions
Whole-wheat tortillas
Parsley, salt, and olive oil to cook the tofu
Additional add-ins:
Lettuce
Brown Rice
Avocado
Sour cream
Shredded cheese
Tomato salsa
Directions:
Cook the tofu in a frying pan with a little oil, salt and parsley until the tofu is creamy and smooth when you bite into it.
Add the corn and black beans (with the juice of the beans!)
Continue to stir the mixture on medium-high heat, adding your green onions about a minute after the beans.
Stir the mixture together and cook until everything has blended well together.
Assemble your burritos with your add-ins and serve!
