Quinoa salad

Ingredients

For cooking quinoa
Quinoa – 1 cup
Water – 11/2 cup

Method
Add water to quinoa and cook for 25minutes
Store cooked quinoa in an airtight container in fridge for 3 to 4 days and freezer for more days

Quinoa Salad

Cooked quinoa – 1 cup
Onion – 1/2 cup
Red capsicum – 1/2 cup
Cucumber – 1cup
Romaine lettuce -1cup
Cherry tomatoes – 12 nos
Feta cheese

For Dressing
Salt
Pepper powder -11/2 tsp
Olive oil. – 3 tbsp
Lemon juice. – 3tbsp

Method
Mix all the ingredients given for dressing together and keep it aside.

Salad method
In a bowl add quinoa, onion, cucumber, red capsicum, lettuce , 1/2 of the pomegranate seeds and mix it together
Add the dressing and mix it
Spread feta cheese over the salad just before serving and garnish with rest of the pomegranate seeds
