Breakfast: Choc Peanut Butter Smoothie Bowl
– splash of plant-based milk (the less the better)
– 1 tbsp cacao powder
– 1 tbsp Amazonia Vanilla Protein
– 2 tbsp peanut butter
– 2 frozen bananas
Topped with granola, coconut yoghurt and strawberries

Lunch: BBQ Jackfruit Tacos
– 1 pack of Amazonia Smoky BBQ Tender Jack
– 4 corn tortillas
– 1/4 cup cooked quinoa
– sesame seeds and sprouts to garnish
Sauce:
– 4 heaped tbsp vegan mayo
– 1/4 cup shallots/spring onion
– 1/4 cup nutritional yeast
– 1/4 cup plant-based milk
– juice of 1/2 a lemon
– pinch of salt
Guac:
– 1/2 avocado
– juice of 1/4 lemon
– pinch of salt
– pinch of pepper

Arvo Snack: Cookies
– 6 tsp peanut butter, frozen
– 6 tsp almond butter, frozen
Cookies:
2/3 cup vegan butter
1 cup raw sugar
1 flax egg (1 tbsp flaxmeal to 3 tbsp water)
Splash of vanilla
1 cup plain flour
2/3 cup cocoa powder
1/2 tsp baking soda

Dinner: Nourish Bowl
– 1/8 pumpkin, roasted
– 1/2 bunch of kale
– 1/2 cup quinoa
– 1/2 cup frozen peas
– 1/2 block tofu
– 1/2 block chickpea tempeh
– vegan aioli and lemon to serve
