Welcome back to my channel, it has sure been a while!

Here are 3 easy + healthy (and vegan) breakfast ideas for you all. If you follow me on instagram you would know that I literally post my breakfast…EVERYDAY. & a lot of y’all asked for the recipes. So here you go!

I am finding such a joy and passion for cooking and baking at the moment, so get ready for more to come. If you have anything you have seen and want me to post a video of…let me know!

RECIPE 1 – PANCAKES

Ingredients:
1 cup of oats (quick oats preferred)
3/4 cup of oat milk (can use any nut or dairy milk)
1 sliced banana

Method:
1. Place your oats in a blender. Blend on low-medium for around a minute. This should create a fine flour consistency. Depending on what blender or food processor you use you can determine how much time you may need.
2. Once the oats have been turned into flour, tip your 3/4 cup of milk in the blender. Now also add the sliced banana.
3. Blend this until you get a pancake mixture. Try have little to no bumps involved.
4. Heat up a medium sized skillet on your stove top.
5. You can now add in whatever you may want to the pancake mixture. You can keep it plain or add vegan chop chips like me or other ideas may be protein powder or berries!
6. Transfer mixture to the pan creating small round shapes with the back of the spoon.
7. Let cook for a couple of minutes and keep feeling it with a spatula of some sort. You can determine when it is ready to be flipped. Flip it over and cook the other side.
8. Simple as that. This recipe should make around 4-6 pancakes. It depends on how big you may want them!
9. Transfer all pancakes to a plate and cover with whatever you like. Try to make them look pretty 😉

RECIPE 2 – CASHEW AND AVOCADO TOAST

Ingredients:
1 avocado
1 tomato
Cashew Cream Cheese or Cream Cheese of Choice
1/4 cup of hemp seeds
1tbs of chilli flakes
1/2 lemon squeezed
2 pieces of sourdough

Method:
1. Cut your avocado in half. You can choose whether you want to slice it or mash it in a bowl. (I mashed it)
2. Slice tomato in thin slices.
3. Toast your sourdough. (You can have it fresh if you wish)
4. Remove toast from toaster and place on a plate. Using a butter knife, spread your choice of base on the bread. I used a cashew cream cheese that I made prior to making this video. (Let me know below if you want this recipe. It’s INCREDIBLE). You can simply use normal cream cheese or just butter also.
5. Spread the smashed avocado on top and evenly spread sliced tomato.
6. Sprinkle the hemp seeds evenly on top of bread. Add chilli flakes also.
7. Squeeze fresh lemon and add whatever else you may want on top.
8. EAT AND ENJOY!

RECIPE 3 – TOFU SCRAMBLE WITH VEGETABLES

Ingredients:
1/3 packet of tofu (firm)
1 tomato
1 handful of baby spinach
1/2 mashed avocado
1/2 tsp of tumeric
1/2 tbs of chilli flakes
1 lime

Method:
1. Using paper towel or a dry cloth, squeezing the tofu to get rid of any excess liquid or moisture.
2. Using a fork or your CLEAN hands, scramble the tofu into tiny pieces. Now place this onto a skillet over medium heat. Let cook for around 1-2 minutes.
3. While tofu is cooking, prepare the chilli, lime and tumeric dressing. Squeeze one whole lime, the 1/2 tsp of tumeric and 1/2 tbs of chilli flakes into a small bowl. Mix around with a spoon until all combined. Now transfer this to the tofu cooking in the pan.
4. Mix this around to let it soak in that lime moisture.
5. While that is soaking, slice up a whole tomato and wash your spinach.
6. After the tofu scramble has cooked, transfer it to a plate. Place the sliced tomato on the pan at medium heat. Letting it roast for 1 minute each side.
7. Transfer the tomato to the plate with tofu and place the handful of baby spinach onto the heat. Letting it cooking and mix around for a maximum of one minute.
8. Transfer this to the plate and also spoon in some mashed avocado on the side.
9. Top with anything of choice. I chose salt, pepper and more chilli flakes. (I love chilli)
10. ENJOY!
