SWEET POTATO AND PEANUT SOUP
Ingredients;
1 tbsp groundnut/canola oil
1 cup diced onion.
2″ ginger finely chopped
12-14 cloves garlic
1 green chilli, de-seeded , finely chopped.
400 gm sweet potato peeled and cut in 1/2 ” cubes .
1 cup coconut milk
50 gms unsalted roasted peanuts
Salt, pepper, fresh coriander.
2 tablespoon lime juice
1tablespoon roasted pumpkin, chia & sunflower seeds (seed mix).
Process
Heat oil in a large pan, saute onion for 4 – 5 min, stir in ginger, garlic and green chillies for one min saute add the sweet potato, add 4 cups water bring to a boil , then cook on low flame till sweet potato cooks . Transfer half the Soup in a blender, add the coconut milk, add the peanuts. Blend well . Put it back in the pan with the remaining soup, add salt and pepper.
Remove from heat add coriander, lime juice and roasted Pumpkin Seeds
One serving contains approx 200 calories 9 gm Fat, 19 gm complex carb, 7.5 gm protein
It is beneficial for immunity boosting and will help in fighting all kinds of diseases (including corona virus, as immunity will get stronger).
Apart from all the benefits of ginger and garlic its also rich in vitamin C and fibre.
