Ingredients:
2 eggs
1 medium-size onion
2 green chillies

Dry spices:
1/2 tsp Red chilly powder
1/2 tsp black pepper powder
Salt to taste

Method:

1. Add the chopped onions, green chillies, eggs and whisk lightly.
2. Add the dry spices. Mix for 2-3 minutes continuously.
3. Heat oil in a large non-stick frying pan. Pour in the egg mix in it and give it a quick swirl making sure to distribute it evenly across the pan.
4. Cook the underside for a minute on low-medium heat till it sets is light brown and slightly crisp around the edges. Flip the omelette to one side and cook for a further minute. Set aside & keep warm.
