This is an easy dinner idea that I decided to make when I realized it was almost dinner and I had nothing made.
You guys should DEFINITELY try it!! It’s sooo yummy, and the salad pairs nicely with the fish!!
Salad:
1 box of spinach & arugula salad mix
1 can of sliced beets
1/2 cup of dried cranberries
1/2 cup of feta cheese
1 cup of toasted pecans
Dressing:
1/2 cup of olive oil
3 Tbsp of Balsamic Vinegar
1 Tbsp of Dijon Mustard
2 garlic cloves minced
1/2 tsp of Salt
1/4 tsp of Pepper
Fish:
Frozen tilapia filets
Drizzle olive oil, salt & pepper
Slice a lemon and place anywhere on fish or pan.
Bake at 425 for 7-10 min.
