Red Quinoa, ( cooked )
Corn ( cooked or raw )
Lentils ( cooked )
Carrots ( chopped/roastsed )
Tomatoes ( chopped )
Scallion s( chopped }
Fresh Mint ( Chopped )

1 Roasted Red Bell Pepper,
Lemon juice from 2 lemons,
2-3 tablespoons Raw vinegar
1 tablespoon cumin
teaspoon each…garlic powder, black pepper and salt
