Hi guys! Here in Argentina is the cold and autmny season right now and who doesn’t love autumn? It’s a whole vibe, the colors, the weather, the feeling anddd… The cozy and delicious food. On today’s video I’ll show you what I eat when it gets colder, lots of vegan and healthy recipes to keep you warm and happy.

BREAKFAST

oat Apple pie

2 red apples
400 gr of rolled oats
1 and 1/2 cups of oat milk
1/4 cup of chia seeds
2 tablespoons of stevia
1 tablespoon of cinnamon
1 tablespoon of vanilla extract
2 tablespoons of brown sugar
1/4 cup of chopped walnuts

On a baking bowl lay some apple slices, then add the oats, the milk, the chia seeds, stevia, cinnamon and vanilla extract, mix everything together and then top it with more apple slices, cinnamon, brown sugar and chopped walnuts then bring it to the oven for 35 minutes at 180°c.

Yo can eat this delicious healthy cake right away when it’s warm or you can store it in the fridge for up to 6 days and eat it cold.

SNACK

LUNCH

Red lentils and marinara eggplant

For the marinara eggplant:

1 tablespoon of organic olive oil
1 Onion
1/2 red bell pepper
1 clove of garlic
A handful of cherry tomatoes
1 big eggplant
A handful of basil
Oregano
Salt and pepper to taste

On a pan add the olive oil and then cook the onions and garlic until golden, then add the red bell pepper and the cherry tomatoes, add the salt, pepper and basil and let it cook until the tomatoes are soft. When you have a sauce consistency, add the eggplant and the oregano, let it cook with a lid on for 25 minutes.
