A great recipe for a healthy banana bread with no refined sugars, oil or butter. A healthy dessert for every day 🙂
THE RECIPE:
Ingredients
2 eggs
50g coconut sugar
150g flour (regular or wholemeal)
100g almond meal
1/2tsp baking soda
1tsp baking powder
3 ripe bananas and 1 extra banana for decoration (optional)
130g apple sauce
50g raisins soaked in hot water (drain water before use)
50g pecan nuts
Mash the bananas with a fork. Beat eggs lightly in a medium bowl. Add coconut sugar and beat again. Then add all dry ingredients and mix lightly. Add mashed bananas and apple sauce and fold in all ingredients until well combined. Now add raisins and pecan nuts. Continue mixing with a spatula just until combined (do not overmix). Butter a 23cm bread tin and pour in the batter.
Bake the banana bread in 180 C at the middle shelf of the oven for 50-60 minutes. Check with a toothpick if the bread is baked through. Let cool for about half an hour before removing from the tin. Serve chilled or cool with any spread of your liking.
