Serves 4

INGREDIENTS AND METHOD
250g ricotta cheese
Sprinkle of black pepper
2 tbsp extra virgin olive oil
1 green chillies finely chopped
1 tsp cumin seeds grounded
¼ tsp chilli flakes
2 tbsp hemp seeds
Juice of 1 lime
½ tsp Himalayan salt or as per your taste
1 cup chopped spring onions
½ cup fresh fennel finely chopped
½ cup chopped parsley
1 cup finely cubed cucumber
2 cups fresh broad beans boiled in salt-water (for 10 minutes)

Garnish
Sprinkle of pumpkin seeds
Handful mint leaves

Method
1. Combine the ricotta, Himalayan salt, black pepper, olive oil, lime juice, green chillies, cumin seeds powder, chilli flakes, hemp seeds in a bowl and set aside. Mix all the ingredients ensuring the flavours are all blended well.
2. Add the vegetables – spring onions, fresh fennel, parsley, cucumber, broad beans.
3. Sprinkle mint leaves and pumpkin seeds and serve.
