As you know from the last Uyghur Goshnan recipe, making food in the Uyghur tunur is one of the most typical things we do in Uyghur food culture. In the Uyghur cuisine we grill not just Uyghur nan in the tunur but also lots of kinds of meat and vegetables, such as lamb, chicken, fish, Uyghur Samsa, eggplant, sweet potatoes etc.
We used to grill eggplant in the clay tunur at home and add the grilled eggplant to the salad. It is very delicious, juicy and it adds a soft textures to the homemade handmade salads.
In this video I’m going to use a normal oven to grill the eggplant, aubergine, for the eggplant salad recipe 😉

Eggplant salad recipe for 2-4x people
scallion 1x
eggplant 2x about 439g
half a bulb of garlic
tomatoes 4x about 372g
cucumber 2x about 354g
basil 5g
mild green pepper 1x about 42g
onion 1x about 85g
herbs:
vinegar 100ml
salt 2g
white pepper 2g
black pepper 1g
sugar about 2-3g
