🛑 INGREDIENTS 🛑

Bitter Gourd – 2 large thinly sliced (500 gm or 4 cups)

For Marination:
Turmeric powder – 1/2 tsp
Chilly powder – 1 tsp
Fennel Seed powder – 1/2 tsp
Asafoetida (Hing) – 1/4 tsp (optional)
Curry Leaves – 2 springs (optional)
Salt – 1 tsp

Onions – 2 large (thinly sliced)
Tomato – 1 large (sliced)
Carrots – 1/2 cup (finely shredded)
Coriander Leaves – 1 cup (chopped)
Lemon – 1 tbsp
Green Chilly – 1 tbsp (finely chopped)
Salt – 1/2 tsp

*Do not add water, as it releases water after resting*

🛑 METHOD 🛑
Step 1:
Into a large bowl, add all the ingredients and marinate the thinly sliced bitter gourds for 20 to 30 mins.
Heat the oil in a pan for deep frying.
Add the bitter gourd slices and fry until golden crispy.

*Do not burn the bitter gourd, as it’s taste will completely change*

Step 2:
Now in another mixing bowl, add the sliced vegetables.
Mix all the ingredients well with your hands.
Then toss in the fried bitter gourds and mix it well with a spoon.

*Add the fried bitter gourd just before serving, else it will become soggy*
Serve immediately as a salad or a side dish with plain rice.
