I love Chipotle bowls so I tried to recreate it at home! Enjoy! Great meal idea because you can eat it right away or prep the ingredients ahead of time and have it ready to eat it throughout the week!
Recipe:
Chicken:
-Chicken Thighs/ Breast
-Salt
-Pepper
-Dried Oregano
Season Chicken. Bake in the oven at 400 degrees F
Cilantro Lime Rice:
– 2cups Brown/White Rice
-Zest of 1 lime (optional)
-1-2 Limes
-Handful of Cilantro
Rinse the rice then add the appropriate amount of water. You can zest a lime in the pot before cooking if you want (optional step). Cook on the stove at high heat til the water boils. Once boiling turn down the heat to medium and cook until all the water is absorbed.
Sautéed Veg:
-1 Onion
-2 Green Bell Peppers
-Salt & Pepper
-Dried Oregano
Cut the onion and peppers into strips. Sauté until soft. Season with Salt, Pepper and Oregano
Toppings:
-Salsa
-Sour Cream
-Corn
-Black beans
-Shredded Cheese
-Avocado
