INGREDIENTS
Roasted Chickpeas – 1 Cup
Kale Leaves – 1 Bunch ( Stem removed , Leaves Torn)
Lemon Juice – 1 Tsp
Olive Oil – 1 Tsp
Chopped Carrot – 1
Red Beetroot – 1
Avocado – 1
Dried Cranberries – 1/4 Cup
Salt
Pepper

For the Carrot Ginger Dressing :
Chopped Carrots – 1/2 Cup Chopped
Water – 1/2 Cup
Olive Oil – 1/4 Cup
Lemon Juice – 2 Tbsp
Ginger – 2 Tsp Shredded
Salt – 1/4 Tsp

METHOD:
Spread the chickpeas on to a tray along with some chopped carrots needed for dressing.
Roast them at 400°F for 25 mins or till the chickpeas become crispy and brown and carrots become soft.
In a blender , blend carrot , ginger along with lemon juice , olive oil , water and salt until smooth and creamy.
Make this dressing beforehand and chill them for 1 – 2 hrs.
Now take the kale leaves and add oil and salt to this.
Massage the leaves very well till leaves become soft and reduce the size little bit.
Add all the other ingredients to this and toss well.
Drizzle carrot dressing to this and top it with avocados and add more dressing.
Season with pepper.
