Buddha Bowls:
1 cup quinoa
3 cups vegetable broth
1/3 of a cup of black beans
2 tbls. of hummus
arugula micro greens
1/2 tbls. hemp hearts

Combine quinoa and vegetable broth in a rice cooker (you can also cook it on the stove). Once the quinoa is finished, combine all ingredients in a bowl. Enjoy!

Sandwiches:
Multi-seed bread
1/4 of an avocado
2 tbls. hummus
1/2 cucumber
arugula microgreens

Assemble all ingredients as a sandwich. Enjoy!

Lettuce Wraps:
1 tbls. hummus
1/3 of a can of black beans
1/2 tomato
4 mushrooms
1/2 yellow onion
1/8 tsp. smoked paprika
1/8 tsp. cayenne pepper
1 tsp. chili powder
1 leaf of lettuce
Sauce of your choice

Chop and sauté mushrooms and onion with smoked paprika, cayenne pepper, and chili powder. Spread the hummus on the lettuce leaf, then add sautéd mushrooms and onions, beans, tomatoes, and sauce. Enjoy!
