I am showing you guys four of my favorite easy dinners! All of these are simple, quick to prepare, and healthy. These are perfect for a busy weeknight or for a night when you don’t want to spend a long time in the kitchen.

Fish and Steamed Veggies

Preheat oven to 400F. Place fish on a baking sheet lined with parchment paper and season to taste. Bake until it flakes easily with a fork (145F). Meanwhile, steam veggies of choice. Enjoy immediately.

Sausage and Peppers Over Rice

Cook rice according to package directions. Chop veggies of choice and sausage in olive oil in a saucepan over medium heat until veggies are soft and sausage is heated through. Serve sausage and veggies over rice.

Pizza Pasta

Brown ground meat of choice, season to taste, and add pizza sauce or marinara. Meanwhile, cook pasta according to package directions and prepare toppings of choice. Serve meat mixture and veggies over pasta.

Stuffed Peppers

Preheat oven to 400F. Brown ground meat of your choice, season, and add marinara. Meanwhile, remove tops and seeds of bell peppers and cut in half. Place on a greased foil lined baking sheet and place in oven for 10-15 minutes. Remove peppers and fill with meat mixture. Top with cheese and return to oven for 10-15 minutes. Remove and top with additional cheese and serve.
