INGREDIENTS
For the Dressing
Jaggery Powder 1.5 Tbsp
Green Chilli 1 – 2 pieces (finely chopped)
Tamarind Extract 2 – 3 Tbsp (adjust based on thickness & sourness)
Extra Virgin Olive Oil 1 Tbsp
Lemon Juice 1 Tbsp
Black Pepper Powder 1/4 tsp
Salt To Taste
Mix all the ingredients to make a sweet and sour salad dressing
For the Salad
Carrot 1 cup or 150 grams (grated)
Fresh Coconut 1/2 cup or 50 grams (grated)
Fresh Methi or Fenugreek Leaves 2 to 3 cups
Orange 2 Medium Sized
Shallots or Onion 2 Tbsp (Finely Chopped)
Fresh Coriander Leaves 1/4 Cup (Finely Chopped)
Curry Leaves 8 – 10 (finely chopped)
Toasted Sesame Seeds 2 Tbsp
Combine all the salad ingredients with the dressing
SERVES 3 – 4
