This is the best Quinoa salad ever for weight loss. This is an easy and delicious recipe that will not disappoint. This Quinoa Salad recipe features a colorful mix of veggies tossed with crunchy cashew nuts and simple olive oil dressing for a deliciously vegan healthy meal. This refreshing, crunchy salad packs great for picnics, road trips, lunch, dinner, and of course potlucks. Just add Cashews when you are about to serve otherwise cashews will be soggy.

Quinoa – 1 Cup
Water – 1 &3/4 Cups
Salt – 1 Tsp
Extra Virgin Olive Oil – 1 Tbsp
Sweet & Spicy Roasted Cashews:
Cashews – 1/4 cup
Maple Syrup/Jaggery Powder – 2 Tbsp
Salt to taste
Red chili powder/Cayenne Pepper to taste
Salad:
Chick Peas – 1 cup
Carrot – 1/2 cup
Onion – 1/4 cup
Red Bell Pepper – 1 cup
Red cabbage – 1 cup
Parsley – 1/4 cup
Cucumber – 1 cup
Cherry Tomatoes – 3/4 cup
Dried Cranberry – 3 Tbsp
Dressing:
Lemon juice – 1 Tbsp ( changeÂ
Extra Virgin Olive Oil – 3Tbsp

1. Place the quinoa in a fine-mesh strainer. Rinse thoroughly under cool, running water. Rub and swish the quinoa with your hand while rinsing. Drain.
1. To cook the quinoa: Boil 1 &3/4 cups of water or Vegetable Broth with salt and olive oil in the saucepan and add 1 cup Quinoa. Turn the heat down to low. Cover and cook for 15- 20 minutes. Remove from heat, cover, and let the quinoa rest for 5 minutes, to give it time to fluff up. Boil quinoa just as you would any other grain, like rice or barley!
2. Let the quinoa cool down completely for salad.
  Note: Cook the quinoa a day before you plan on serving the salad.
1. Meanwhile, prepare the sweet and spicy toasted cashew nuts. Toast Cashew nuts at low flame, add Maple Syrup, Cayenne pepper. Keep it aside for a later crunch.
2. In a large bowl, toss together Quinoa, Chickpeas, red cabbage, red bell pepper, cucumber, tomato, onion, carrot, and Parsley.
3. Drizzle extra virgin olive oil, lemon juice over the salad. Toss until the salad and dressing are thoroughly combined.
4. Toss sweet and spicy cashews when ready to serve. Note: (Do not add them before serving otherwise it will be soggy).
