Coffee Cake with Coffee Syrup
I love coffee cake so much especially the ones with sour cream. In this healthy edition, I used Greek yogurt instead and added cashew caramel. WOW! It’s SO good!! For a super tasty crunch, top with cashew caramel coated walnuts! AND drizzle with sugar free coffee syrup. So filling and delicious!!
Ingredients:
35g almond flour
25g self raising flour
15g coffee protein powder (I use @happywayau)
1/2 tsp baking powder
Pinch of salt
1 egg white
40g greek yogurt
1 tsp instant coffee
1 tbsp @panaorganic cashew caramel (or honey)
1 tbsp sugar free maple syrup
3 walnuts, roughly chopped and lightly coat in cashew caramel (or honey)
Coffee Syrup:
Dissolve 1/4 tsp instant coffee in 2 tbsp sugar free syrup.

1) Mix flours, protein powder, baking powder and salt.
2) In a separate bowl, using a fork, whip together egg white, yogurt, instant coffee, cashew caramel, and maple syrup. Then add to flour mixture and stir to combine.
3) Pour into two greased ramekins.
4) Top with caramel coated walnuts.
5) Bake in air fryer for 7-8 minutes on 160.
6) Remove from air fryer and allow to cool for 10 minutes. Then drizzle with coffee syrup.
