Creamy Vegan Pot Pie 🥧
-1 can of corn (drained)
-1 can of mixed veggies (I used the one with potatoes & veggies)
-1 can white beans, don’t drain (I used great northern)
-3 cups of flour (I used all purpose but you can swap for whole wheat)
-1/2 tsp of yeast
-1 tsp salt
-3 1/8 cups of water
-2 tbl cornstarch
*biscuits:::: mix flour, salt, yeast and about 3 cups of water into a bowl. Dough will be sticky! Cover with a towel and let sit at least 8-12 hours
*pot pie: pour veggies into a pie baking dish (I like to spray a tiny amount of avocado oil on my pie dish)
Add corn, beans, 1/8 cup water and cornstarch to a blender and blend until smooth
Pour cream mix over veggies
Once your dough is ready. Cut into 6-8 stick biscuits (don’t over roll them, just cut the dough, gather into a biscuit shape and drop into your pie)
*Bake at 400 covered for 30 minutes, remove cover and bake for an additional 6-7 minutes until biscuits are done
*I recommend putting your pie dish on a baking sheet to catch any spill over from your pie
