For making of Cutlet
Fox nuts (3 cups) – 30 gm
Roasted chickpeas (Bengal gram) – 60 gm
Bottle gourd – 150 gm (grated)
Pumpkin – 100 gm (grated)
Carrot – 100 gm (grated)
Garlic cloves (big) – 5 nos (5 gm)
Ginger cube – small
Mint leaves – 2 gm
Green chilli – as per taste
Coriander leaves (1/4 cup) – 10 gm
Coriander powder – 1 spoon
Cumin seeds powder
Turmeric
Red chilli powder and Salt as per taste
For making of green chutney
Roasted chickpeas (Bengal gram) – 60 gm
Green chilli – as per taste
Garlic cloves (big) – 4 nos
Curry leaves
Coriander leaves (1/4 cup) – 10 gm
Cumin seeds
Salt as per taste

Cooking Method
Green Chutney
This vegetable cutlet can be snaked with the green chutney. This green chutney can also be
complemented with your dosa or idli. This chutney is very tasty. So lets first prepare the
green chutney. This chutney required no cooking preparation and is also a no oil recipe as I
have not used any fats while making this chutney

Add roasted chickpeas (Bengal gram, green chilli – as per taste, garlic cloves, curry leaves,
coriander leaves (1/4 cup), cumin seeds, salt as per taste along with ½ cup water in the
mixer jar and make fine paste. Check for consistency. Add little water if required and grind
again to make it a fine paste. Once done, take it in a bowl and add water to suit your
consistency.
The chutney can be used as dosa chutney, or idli chutney or with cutlet or paratha. Check
salt as required. The chutney lasts up to 3 days if sorted and refrigerate in airtight container

Making of Fox nut vegetable cutlets
I am making this recipe without any grains or cereals but just fox nuts. The calorie count of
this cutlet has been reduced considerably by using fox nuts.
Heat the pan, add fox nuts heat on low flame from 5 to 8 minutes until they become
crunchy. To check if fox nuts is properly baked, break 1 with hands. It should burst into
pieces. Once they are crunchy, switch off the heat, take them in a bowl and allow them to
cool.
Roast roasted chickpeas in the pan, once properly roasted, take them off flame and allow
them to cool.
Once cooled grind and make fine powder of half of the stuff and coarse powder of the
remaining. This will add crunchy taste to the cutlets.
Grate the pumpkin, bottle gourd and carrot finely.
To make mix or masala, add garlic cloves (big) – 5 nos, ginger cube, mint leaves, green chili
as per taste, coriander leaves to the chopper and chop them finely. Adding more mint leaves
will enhance the taste of the cutlet, so add more mint leaves as required.
Mix fine fox nut chickpeas powder with the green masala, add grated pumpkin, bottle gourd,
carrot, and course foxnut chickpeas powder. Then add spices such as coriander powder – 1
spoon, cumin seeds powder, turmeric, red chilli powder and Salt as per taste. Mix well and
make dough/
Divide this dough into 11 equal parts and make cutlet mould. These cutlets may be stored
for 2 days if refrigerated and may be used as evening snack too in addition to healthy
breakfast for weight loss.
Heat the pan and grease it with little oil. Bake the cutlet on both sides upto 5 to 8 minutes
on low – medium flame. Serve hot.
