This is a healthy, quick and easy palak paneer recipe anyone can make. No blanching of palak/spinach which retains the nutrition. Also the recipe is with very little spices and takes less time. Perfect for lunch and dinner. Goes well with naan and roti, even with rice.

Ingredients:

Garlic – 5 cloves ( 2 for boiling, 3 for frying)
Ginger – 1 inch
Onion – 1 medium
Tomato – 1 medium
Palak/ spinach leaves – 1 bunch (~350 grams)
Paneer cubes – 200 grams
Green chilli – 2
Salt – 1.5 tsp
Oil – 2 tbsp
Turmeric – 1/2 tsp
Kashmiri red chilli powder – 1/2 tsp
Methi/Fenugreek seeds – 1/2 tsp
Kasuri methi /dry fenugreek leaves – 1 tbsp
Butter/fresh cream/ghee – as per taste

Method –
Boil onion, garlic, ginger, tomato in a saucepan. Cool down and transfer to blender jar.
Add green chilli and palak/spinach leaves and blend to a smooth paste.
In a pan, heat oil and add the methi seeds, chopped garlic. Fry lightly.
Now add the paste and cook for 10 mins on a medium flame.
In between, add salt, turmeric and red chilli powder.
When the paste looks cooked well, add the paneer cubes.
Add little salt for the paneer and add sugar (optional).
Also add little bit of water to adjust the consistency of the gravy. Simmer for 2 more minutes and delicious palak paneer is ready.

Add a dash of butter/ghee/cream as needed while serving.
