HAM & BACON EGG ROLLS / 490 kcal

INGREDIENTS
Eggs 5
Salt
Black pepper
Milk 100 ml
Olive oil 2 tbsp
BAKE
200°C / 400°F
20-25 minutes
Ham 9 slices
Spinach ⅓ bunch
Mozzarella 70 g
Bacon 6 slices
Mozzarella 4 slices
BAKE
200°C / 400°F
10-15 minutes
Green onion

PREPARATION
For the omelet mix the eggs, salt, black pepper and milk.
Pour the mixture in a baking pan and place in the oven for 20-25 minutes at 200°C / 400°F.
When the omelet is ready put the ham slices on top, add the spinach, shredded mozzarella and
fried bacon.
Roll the omelet and put extra mozzarella slices on top.
Bake in the oven for another 10-15 minutes and serve with sprinkled green onion.

INGREDIENTS
Chicken breast 200 g
Cherry tomatoes 20
Salt
Black pepper
Olive oil 2 tbsp
Spinach 2 leaves
Mozzarella 4 slices
BAKE
200°C / 400°F
25 minutes
Spinach ½ bunch
Olive oil 2 tbsp
Lemon juice 2 tbsp
Garlic 3 cloves
Salt
Black pepper

PREPARATION
Place the chicken breast in a baking pan, add the cherry tomatoes.
Season with the salt and black pepper and pour the olive oil.
Add the spinach leaves and mozzarella slices.
Place in the oven for 25 minutes at 200°C / 400°F.
For the sauce blend together the spinach, olive oil, lemon juice, garlic, salt and black pepper.
Serve the chicken with the sauce on top and enjoy!

CAULIFLOWER SPINACH SALAD / 380 kcal

INGREDIENTS
Cauliflower 150 g
Melted butter 40 g
Salt
Black pepper
BAKE
200°C / 400°F
25 minutes
Greek yogurt 100 g
Olive oil 2 tbsp
Lemon juice 2 tbsp
Salt
Black pepper
Garlic 2 cloves
Honey 1 tbsp
Mustard 1 tbsp
Spinach ½ bunch
Eggs 3
Dill

PREPARATION
Put the cauliflower in a baking pan, pour the melted butter, season with the salt and black
pepper, stir.
Place in the oven for 25 minutes at 200°C / 400°F.
For the dressing mix the greek yogurt, olive oil, lemon juice, salt, black pepper, garlic, honey
and mustard.
Add the chopped spinach at the bottom of the plate, pour the dressing, add a layer of eggs,
another layer of dressing with cauliflower.
Sprinkle the chopped dill.
