Kodo millet (Varagarisi) tomato dosa is crisp, spicy and flavorful breakfast recipe. Millets are gluten free grains, rich in fibre, protein, phosphorus, magnesium, other minerals, vitamin B, low in glycemic index, help lower blood pressure and cholesterol. Millets in moderate use is good for health.

Ingredients:
1. Kodo Millet or Varagarisi – 1 cup
2. Tomatoes medium chopped – 2 nos
3. Onion chopped – 1
4. Coriander seeds – 1 tsp
5. Cumin or jeera -1 tsp
6. Ginger – 1 tbsp
7. Kashmiri Chillies – 2 nos
8. Red Chillies – 3 nos
9. Coriander Leaves – 1/4 cup
10. Ghee and oil for dosa preparation
11. Water as required

Method:
1. Soak Kodo Millet in water for 6 hours (overnight). Even if you want to make this for morning breakfast can soak this overnight too.
2. To a blender take 2 tomatoes, kashmiri chillies, dried red chilli, ginger, coriander seeds & cumin seeds.
3. Blend to smooth paste without adding any water.
4. Then add the soaked millet & water & grid to a slightly coarse batter.
5. Transfer the batter to a mixing jar. Add finely chopped onions and coriander leaves to the batter & add water furthermore, add 1 cup water and mix well.
6. Prepare a watery consistency batter like rava dosa batter.
7. Now carefully pour the dosa batter over very hot tawa.
8. Also spread a tsp of oil uniformly. Lower the flame and cook until the dosa turns golden and crisp.
finally, fold the dosa and serve tomato dosa immediately with coconut chutney.
