RECIPE DIRECTIONS:

PUMPKIN BREAD

Preheat oven to 350 degrees Fahrenheit

Step 1) Blend 2 cups of oats.

Step 2) Add the following ingredients to the blend:
1 can of pumpkin
2 eggs
Blend again.

Step 3) Add the following ingredients to the mix:
1/3 cup sugar free syrup (I used the Great Value one – it’s the generic Walmart brand)
1/2 tsp of vanilla
1 tsp baking soda
A pinch of salt
Pumpkin spice seasoning OR cinnamon & nutmeg
Blend again and bake in an oiled baking dish for 30 minutes.

COWBOY CAVIAR (my version):

1 can of sweet corn
2 stalks of chopped celery
1 can of sliced olives
1 can of black beans
1 chopped green pepper
1/2 sliced avocado
2 tbsp olive oil
2 tbsp lemon juice or lime juice
1 tbsp garlic
Salt, pepper, and hot sauce to taste
Mix all ingredients. That’s it! 🙂

CHICKEN FRIED RICE:

Grease a frying pan and turn heat to high.

Step 1) Cook the the following ingredients together with a lid covering the pan until chicken is cooked:
1 chicken breast (chopped)
1/2 onion
Garlic to taste (I used ~2 tbsp)
Pinch of salt, pepper, paprika, and garlic powder

Step 2) Add vegetables of choice (I used a vegetable mix).
Cook until vegetables are brown with a lid covering the pan.

Step 3) Add 1 egg to the mix and fry.

Step 4) Add rice (the original recipes used 1/2 cup of basmati rice) with 1/2 tbsp of soy sauce.
Cook again. Serve.

CHOCOLATE MUG CAKE:

½ cup oats
1/4 cup milk
1 egg
1 tablespoon sweetener (I used chocolate syrup but you can use sugar or another syrup)
½ teaspoon baking powder
A pinch salt
1 tablespoon cocoa powder
Blend all ingredients. Microwave in a bowl or mug for 90 seconds to start with, and at additional 30 seconds intervals if necessary.
