Crispy on the outside & filled with goodness of veggies on the inside, these veggie nuggets are a perfect snack recipe for all occasions. Also a great snack recipe for all the kids who are fussy with eating vegetables!
Ingredients:
3-4 boiled mashed Potatoes
1 small cup finely chopped Cabbage
1 small cup finely chopped Capsicum
1 small cup finely chopped Carrot
1 small cup finely chopped Onion
1 small cup finely chopped Coriander
1 small cup boiled Corn Kernels
1 cup soaked Poha
1 tbsp Ginger-Garlic Paste
1 tbsp chopped Green Chilli
4 tbsp Corn Flour
1 tsp Amchur Powder
1 tsp Red Chilli
1 tsp Mixed Herbs
1 tsp Garam Masala
Salt as per taste
Oil for frying
For coating:
1 cup Vermicelli (Sevai)
1 cup All Purpose Flour
2-3 tbsp Water
Recipe:
In a large mixing bowl add, mashed potatoes, all the veggies, spices, soaked poha, corn flour & mix well to form a soft dough.
Now roll it into a 2 inch thick cylinder and cut it into 1 inch thick small piece small small pieces ( (rectangular shaped nuggets).
In another small bowl, add all-purpose flour, little water & mix it well to form a thick slurry.
Now dip the nuggets into the slurry and coat them with sevai (vermicelli).
Refrigerate for 15 minutes & then deep fry them till golden brown on all sides
Serve them with ketchup or chutney of your choice.
