Lets get started with this Crispy Chickpea & Kale Ceasar Salad. Simplicity is key when working on shifting into a healthier lifestyle.
I am going to start bringing more recipe and nutrition inspiration to the channel,
and we are going to start with this Simple Crispy Chickpea & Kale Caesar salad.
It is dressed with a creamy vegan dressing and topped with crispy chickpeas and croutons bites.
The full Full Recipe is below:
Salad Ingredients: Kale, cherry tomatoes, 1/4 of a red onion, 1 can of chickpeas rinsed and drained, sourdough, 1 tbsp of olive oil, 1 tbsp of garlic powder.
Dressing Ingredients: 1/4 cup of Tahini, Juice from one large lemon, 1-2 cloves of garlic, 1 tsp of capers, 2 tsp of brine from the caper jar, 1 tsp of Dijon mustard, water for thinning.
*One date or a bit of maple syrup is optional. If you prefer a sweeter Caesar dressing you can add the sweetener option.
Method:
1. Begin by cleaning and chopping your Kale(removing the leaves from the stem), then you are going to slice your cherry tomatoes in half, and slice a red onion. Add all of your ingredients to a large bowl.
2. Place your drained and rinsed Chickpeas to a baking tray lined with parchment paper and to the other half of the tray, add your cubed sourdough.
3. Drizzle your olive oil over both the Chickpeas and Sourdough and sprinkle with your garlic powder. Give them a quick toss with your hands to coat. Place in the oven @ 375 for 20 min.
*If you enjoy a really crispy chickpea then remove the sourdough at this time and let the chickpeas roast a bit longer, to your liking.
4. Now Prepare your dressing. All of the dressing ingredients can go into a blender. Give them a good blend, adding a bit of water if needed to achieve your desired consistency.
Tip: I often triple this dressing recipe and store in the fridge.
5. Then you are going to dress your salad with your chickpeas, sourdough, and dressing.
