Healthy Green Bean Casserole Recipe
Ingredients:
1 large yellow onion, give it the superfine dice
8 oz. organic baby bella mushrooms, give it the super fine dice or sliced
¾ cup chicken broth
½ cup almond milk, unsweetened original flavor
2 cloves garlic, minced
1 Tbsp. plus 1 tsp. Gluten free flour, I used Bob’s Red Mill 1 to 1 baking flour
Pepper to taste
1 tsp. Salt
Olive oil
20 oz. fresh organic green beans, rinsed and trimmed
½ cup gluten free bread crumbs, I used Aleia’s brand with Italian seasoning:
½ cup of freshly grated parmesan cheese
1 Tbsp butter, melted
Directions:
Preheat oven to 350 degrees F.
Place the green beans in a pot of boiling water for about 6 minutes or until just tender. Drain the green beans and set aside.
Pour 2 tablespoons of olive oil into a large frying pan over medium heat and add the onion, mushrooms and a pinch of salt. Cook this for 25 minutes stirring regularly. Turn the temperature down as it cooks to prevent burning.
While the onions are cooking, prepare the liquid for the soup. In a bowl combine the chicken broth and almond milk. Add the flour mixing with a whisk and then add the salt. Whisk well to combine.
After 25 minutes of cooking the onions and mushrooms, add the garlic and stir while cooking for 1 minute. Turn off the heat and set aside.
In a small saucepan add the almond milk mixture and heat over medium heat. Bring to a simmer while stirring and cook for 2 or 3 minutes or until the mixture thickens.
Pour this mixture into the onion/mushroom mixture and stir until completely mixed in. Then add the green beans and toss to coat.
Pour this mixture into a baking dish. I used an 8 x 8 inch baking dish. Combine the bread crumbs with the melted butter and stir until it resembles wet sand. Sprinkle this mixture evenly over the green beans and top with grated parmesan cheese.
Place the casserole into the oven at 350 degrees F for 15 to 20 minutes or until bubbly. Then place the casserole under the broiler on the second shelf from the top for 1 to 2 minutes or until the top turns a golden brown. Enjoy!
