1 thumb ginger
1 tbsp sesame oil
2 tbsp tahini
2 tbsp maple syrup
2 tbsp rice vinegar
2 tbsp soy sauce
2 carrots chopped
Juice 1 lime

Salad
2 cups lettuce
1/4 cup edamame
1/4 cucumber chopped
1/4 cup cooked tofu
Shredded carrot
Any other veggies you like

Blend all ingredients together, add a little water depending on how thick you want the dressing.
For the salad mix toss everything into a bowl and top with dressing.
