Today I am sharing with you veggie pancake recipe which will help you to start your day with a very healthy and tempting breakfast, no matter how busy you are…With breakfast friendly staples on hand like wheat flour, egg, simple veggies, you can easily prepare this pancake within only 5 minutes..As I have used wheat flour or ata instead of maida or plain flour, it can be easily digested.. Let’s check out the recipe below..

Ingredients: (serving 2 people)

Ata / Wheat Flour 1 cup
Room temperature milk (as required to make a smooth batter)
Salt as per taste
Black pepper dust as per taste
Baking powder 1/4th tsp
Chopped carrot(1 medium sized)
Chopped capsicum (1 small sized)
Onion (1 medium sized)
Egg 2 pcs

Method:

Make a smooth batter of wheat flour with gradually adding milk..Add salt, pepper dust, veggies and eggs..mix well and add baking powder at the end.. Heat a pan with one tsp of oil.. spread the oil all over..carefully pour the batter in the pan.. Pancakes will not be too thick.. Cover and cook for a minute in medium flame..Flip the other side and if required add oil.. Fry until light golden in colour.. Serve hot with chutney or sauce.. You can pack it in kid’s tiffin box.. It will remain softfor a long time..
