Easy healthy & vegan Apfelstrudel (Apple Strudel)

Crust
150g (spelt) flour
1/2 tsp apple cider vinegar 20g melted coconut oil
75g lukewarm water
Knead into a dough and chill in the fridge for 30 min. Meanwhile, prepare the filling.
4 apples (diced)
1 tsp cinnamon
40g maple syrup/ date syrup or other sweetener
Add these ingredients to a pot and let it simmer for 10-15 min until the apples are soft. Add some water if needed. You can also mash them a bit with a fork. Let it cool for at least 30 min to room temperature!
Roll out your dough, spread filling and roll it up using a clean kitchen towel (like shown in the video). Brush with almond milk (or coconut oil for a browned surface) and sprinkle cinnamon & sliced almonds on top.
Bake at 180 degrees celsius for 40 min until the top is browned. Serve with vanilla sauce and enjoy!
