When you have some leftover bananas and don’t know what to do with them, the best thing will be to do a delicious banana cake. The beauty is that no fancy stand mixer is needed and you can mix everything in one bowl.

Makes one 8 x 4-inch loaf (8 to 10 servings)

Ingredients

• Mashed ripe bananas (3 bananas)
• 80g Unsalted butter (melted)
• 1/2 tbsp baking soda 10g vanilla powder
• pinch of salt
• 1 egg
• 280g of granulated sugar
• 210 all-purpose flour

◆ Instructions

1. Grease an 8 x 4inch loaf pan and preheat the oven to 350 F (180 C)
2. In a bowl, mash the ripe bananas with a fork and add the unsalted butter.
3. Mix in the baking soda, vanilla powder, and salt.
4. Add the egg then stir in the sugar.
5. Mix in the flour.

Bake for roughly 50 minutes or until a tester inserted in the center of the cake comes out clean.

6. Remove from oven and let it rest in the pan for a few minutes. Then remove the banana bread from the pan and let cool completely before serving.

Wrapped well, the bread will keep at room temperature for 3 days.
