This is quick and easy Greek salad full of tomatoes, cucumbers, peppers, red onion, feta and Kalamata olives all brought together with an easy dressing that you will enjoy! Great healthy salad for the summer months or for a quick meal! It also has health benefits!
Cucumber are low in calories and contain a good amount of water and soluble fibre. They are great at promoting hydration and helping in weight loss.
Tomatoes are rich in vitamin C, which is a natural anti-oxidant.
Onions have anti-inflammatory and anti-bacterial properties.
Dressing:
1/2 cup (125ml) red wine vinegar
1 tsp (5ml) garlic powder
1 tsp (5ml) dried oregano
1 tsp (5ml) dried basil
1/2 tsp (2.5ml) pepper
1/2 tsp (2.5ml) salt
1/2 tsp (2.5ml) onion powder
1 tsp (5ml) 5ml Dijon mustard
Pulse to combine
I’m using an immersion blender but you can use a small food processor, blender or a whisk
Slowly pour 6 TBSP (90ml) of olive oil while the blender is running to emulsify.
For the salad:
Halve and dice one English cucumber
1 large (about 340g) tomato, diced
1 pepper, diced
Half a red onion, chopped
about 1 cup (150g) of feta cheese cubed
about 1/2 cup (125ml) Greek olives cut in half
Salt and pepper, to taste
Greek dressing to taste
