Cheap & Healthy Sausage Linguine Pasta

Ingredients:
• 3 Roma/medium tomatoes
• some parsley – for garnishing
• 1 medium/large onion
• 3 cloves of garlic
• 2 TBS (30 mL) Olive oil
• 6 – 7 oz (170g – 198g) linguine pasta
• 8 – 10 oz (226-284g) Italian chicken/pork sausage
• 1 1/2 cup (350 mL) pasta liquid
• 2 TBS (30 mL) tomato paste
• 1/4 tsp (1.5g) salt
• 1/4 tsp (0.6g) pepper
• 1/4 cup (60 mL) sour cream
• 2 TBS (12g) grated Parmesan cheese
• 2 TBS (28.5g) butter
• salt & pepper to taste

Instruction:
1. Cook pasta in salted boiling water according to paskage’s instruction.
2. Large non stick pan on medium heat
3. Slice tomatoes, add into the pans. Cook until one side is slightly brown, flip to other side. Stir occasionally until softened. Remove from the pan
4. Meanwhile, chop parsley for garnshing. Chop onion and mince garlic.
5. Add oil, onion. Stir until translucent. Try to deglaze the pan.
6. Add sausage, stir and break up. Cook until slightly brown.
7. Add garlic, stir until brown.
8. Add 1 ½ cup past liquid. Add tomato paste. Stir until slightly thicken.
9. Add salt, pepper, sour cream, parmesan cheese. Stir until cheese melted, add butter. Stir until butter melted. Add salt/pepper to taste.
10. Reduce heat to low and simmer. Add more pasta liquid if too dry.
11. Add cooked pasta and tomatoes. Stir and done.
12. Sprinkle with chopped parsley for garnishing if desired.
